Our line is equipped with an online proofing tower, specifically engineered to achieve precise proofing times for optimal dough development. With its modular design, high flexibility, and capability to handle a wide variety of pizza products, the line significantly improves production efficiency.

Standard Features

  • This production line is capable of processing dough with a moisture content ranging from 60% to 78%, while preserving the dough structure without damage.

  • Through a series of precision sheeting and rolling processes, the dough sheet can be formed to a thickness of as thin as 2 mm.

  • The integrated online proofing tower enables direct proofing of the dough sheet without the need for tray loading or intermediate handling.

  • The forming cutter adopts a rotary cutting system with an integrated roller-cutting and forming design, allowing rapid blade changeovers without disassembly.

  • After proofing, the dough sheet can be used to produce rimmed pizza bases. The products can be baked directly after forming without any additional processing steps.

  • All roller gaps are automatically adjustable, enabling one-touch recipe recall for fast and efficient changeovers between different products.
